Absinthe Verte



The holy trinity: anise, fennel, and wormwood. These three ingredients are what constitute the base of every absinthe in the world. Originally the favorite drink of the bohemians in Paris in the mid-1800's, absinthe has developed a robust following today due to the detail, complexity, and artistry that goes into crafting the spirit. Red Soles Absinthe Verte is crafted using a Bohemian-era Montpelier recipe that gets its rich herbal depth from a combination of lemon balm, hyssop, peppermint, coriander, angelica root, and of course the holy trinity. Our special blend, based in fine California brandy, and our painstaking attention to detail have resulted in a delicious and refreshing herbal spirit that can (and should) be enjoyed year round. Process:

Absinthe is a high-proof spirit (120 proof/60%) with many different flavor compounds and as such, those who enjoy it have developed ways to mellow the spirit out and help each flavor express itself. The first way to do this is by slowly introducing ice cold water to the spirit until the herbal oil is no longer suspended in the alcohol. The term for this process is "louche," and it is complete when the water has caused an opaque clouding in the spirit. The second way, and perhaps the most famous, involves the pouring of the spirit itself over a sugar cube seated on a slotted spoon above the absinthe glass. The introduction of the sugar was said to counteract some of the traditionally bitter notes in the spirit, though today the ritual is geared more towards the drinkers preference.
